Gluten Free ideas

Gluten Free is Easy

Several people have asked me about my gluten free and sugar free and yeast free way of eating. It's sounds hideous right? It's not. I've adapted and I'm actually a lot healthier than I was a year ago. A few things that cleared up when I started cutting out the three little devils. Here is a short list; indigestion, heartburn, constipation, eczema, hair loss, insomnia, burning mouth syndrome (this one was the worst), toe nail fungus, and anxiety (I still have this one a little but I think it's related to hormones). My body lets me know when I'm eating something it doesn't like.

 Gluten Free Breakfast

Organic plain and low fat yogurt, sliced strawberries and 1/4 cup of granola. Not all granola is gluten free so make sure you check the label. This box doesn't say it's gluten free so I'm guessing it's made in a plant that has gluten and could have cross contamination, but I'm just gluten sensitive so I can eat a little here and there. I keep the yogurt to once a week.

Another option for me is egg omelets with sauteed spinach and red peppers. I buy bagged spinach and pre chop a red pepper so I don't have to do it in the morning when I'm rushed. I saute spinach and pepper and set aside then I put two slightly beaten eggs in a pan and cook until done. I slide the spinach and peppers onto the omelet and enjoy.

A more unique breakfast that I love is sauteed (cooked) quinoa, snap peas and walnuts. Easy, fast and yummy! Just throw them all in a medium hot pan with cooking spray and push around with a spoon.

Gluten Free Snack

Corn tortilla chips and salsa. Take a few out and put a little salsa in a bowl. Never eat from the bag, you'll way too many!

Today I had an 1/2 apple and a handful of unsalted raw almonds. Carrots and a mozzerella cheese stick is another go to snack for me.

Protein shakes with 1 tablespoon peanut butter and 8 ounces vanilla almond milk are delish. Add a teaspoon or two of sugar free butterscotch pudding and it tastes like a butterfinger bar. I promise!

Gluten Free Lunch

I like to eat salads for lunch because they are easy and help keep everything moving if you know what I mean. I buy a bag of salad and/or spinach and a couple of cans of all natural chicken breast. See below:

I put a handful or two of greens on my plate. Add chopped tomatoes, cucumbers, baby carrots, pre chopped peppers, nuts (toasted almonds), avocado...anything really. I put Kiwi on my salad yesterday. The vitamin C helps your body absorb the iron from the leafy greens. Plus it tastes good! I finish it off with a drizzle of olive oil and a squeeze of lemon. Sometimes I use flax seed oil from Nutrition Wholesale, it's full of omega 3.

Sugar Free Beverage

I like to have a carbonated drink with my lunch. I can't drink caffeine because I'm highly sensitive to it and I don't drink sugary drink because of the hypoglycemia so I'm reduced to seltzer water and a squirt of lime juice. Thankfully I'm weird and I really like it. Refreshing! You can add a splash of your favorite juice, sometimes I use cranberry.
